Cold maceration at prefermentation, indigenous yeasts, long vatting (over 20 days) punctuated by pumping over and punching of the cap.
Aging
In oak barrels for 12 -18 months.

"This wine opens with a deep, red licorice-laced nose, layered with wild garrigue, crushed white pepper, and fresh thyme. There's complexity and lift from the first sniff. The palate is taut and linear, showing concentrated dark berries, red licorice, and a mineral streak that carries through. Tannins are firm but folding in, while mocha and pulverized stone echo on the finish. Structured and compelling."
